Valentine’s Day with Orange Cake

These days I am into staying healthy and a fit lifestyle. So, I prefer eating desserts made with ingredients which are naturally sweet like honey, or maple syrup 🍁 😁 As Valentine’s Day is right around the corner, I wanted to make a dessert at home that was not only made with fresh fruits but also free of gluten, dairy, and sugar.

Winter season in the US has citrus fruits in abundance. So, I thought why not an ‘Orange Cake’. After researching for a while now, I found the PERFECT recipe at ‘The Society Co’ blog written by an Australian Blogger. Check her out. But regarding this cake, all I can say is ‘I literally have no words to describe how this luscious indulgence turned out’. This cake was like a ray of sunshine, on this unusually stormy, and rainy California day. My friends and I absolutely loved it. You should give it a try too!

Here goes my version of the recipe because the original recipe uses Rosemary. Personally for me its too strong. So I baked it without rosemary 🙂


For the cake:
2 oranges
1/2 cup raw organic honey
250g almond meal
4 free range eggs
2 teaspoons baking soda

For the syrup:
Fresh Juice of 1 orange
2 tablespoons raw organic honey


*Preheat oven to 350F. Line a 9×3 inch cake tin with parchment/baking paper.
*Boil oranges in a saucepan of water for 1 hour (topping with water as needed). Allowing it to cool slightly before pureeing whole oranges, pips rind and all, in a food processor.
*Beat eggs and honey together. Add baking soda and beat again. Then stir in orange puree and fold in almond meal.
*Pour into cake tin and bake for 1 hour.
*To make the syrup, zest one orange into a saucepan and pour in the juice. Add the honey and boil for 5 minutes until the syrup is thick.
*Turn cake onto a plate. Poke little holes all over the top using a thick wooden skewer. Spoon syrup over the cake. Serve warm or cold with a dollop of coconut ice cream or coconut cream.

SuperBowl LI – New England Patriots

For a crazy ‘Tom Brady’ fan <3 <3 like me, it was kind of an untold or an unestablished truth that I was rooting for New England Patriots. And in spite of them not being able to score until the 3rd Quarter or almost to its end, I still voted for him to be the ‘Superbowl MVP’. Well, now you see how much of an aficionado I am about Brady!  😀

We did a Superbowl squad party at my place with a boatload of appetizers including grilled Hariyali (Green) Cottage cheese, Hasselback Potatoes, and Pull-Apart Garlic Bread. In between all the cheering for the Patriots, I totally forgot to click the pictures of the appetizers except for the bread. Instead of getting a couple of huge loaves of sourdough bread, I bought 3  tiny ones to feed a batch of eight people. You will find tons of great recipes online. Make it at home because it’s delicious. I am sure you’ll like it!
