Happy Holi

Wish you a very Happy Holi to who are celebrating. It is the festival of colors, and celebration of love. In India, it marks the onset of spring and end of winter. While we have tons of desserts to celebrate this tradition with, among them we have chilled Thandai to keep our energy going. Thandai is a refreshing mocktail of some ingredients which naturally cool and soothe the body in scorching heat. Some of the traditional recipes call for rose preserves, and melon seeds. I tweaked the recipe and chose to use dried rose petals and heaps of nuts. The below recipe serves 3.
2 cups Whole Milk
To be ground coarsely:
1/2 cup milk
3 tbsp Slivered Almonds
3 tbsp Cashews
1 pinch Nutmeg
1 tsp fennel seeds powder
3-4 tbsp Poppy seeds
7-8 Medjool dates
2 tsp Dried Rose Petals
For Garnish
1/2 tsp Almonds
1/2 tbsp dried rose petals
*Soak rose petals, poppy seeds, almonds, nutmeg, fennel seeds powder, dates in 1/2 cup of milk for 6-8 hours or overnight.
*Crush all the ingredients coarsely in a blender and keep it aside.
*Simmer the 2 cups milk for 3-4 minutes, and let it cool completely.
*Put 1 tbsp of the poppy seed paste in a glass, pour some milk and few ice cubes. Garnish it with slivered almonds and rose petals.
