Sometimes I just don’t really feel like cooking on weeknights, or I am just too lazy. On those days 15-minute meal is the savior. One such recipe is Paneer Masala cooked in milk.
And now here goes the recipe for the perfect weeknight Paneer Masala:
1 cup cottage cheese chunks (I get it from an Indian store)
1 green bell pepper (cut into squares)
1/2 cup onions (cut in squares)
1/4 tsp red chili powder
1/8 tsp turmeric powder
1/2 tsp garam masala
1/2 cup milk
Salt to taste
1 tsp crushed Kasuri Methi (Dried Fenugreek leaves)
1-2 tsp olive oil
*Heat the pan on a medium flame and put some olive oil.
*Add onions, cook until golden brown. Now add bell pepper and cook for 10-15 minutes while you stir it continuously. *Increase the flame to high and add half of the milk. Stir continuously till the milk evaporates. Reduce the flame to medium.
*Now add cottage cheese, fenugreek, turmeric, chili powder and milk. and some salt. Stir till all the spices amalgamate with cottage cheese.
*At last, add salt to taste and give it a final stir.
*Serve hot with flatbreads or like I serve it with dal and steamed rice 🙂 ❤
