10-Minute Tacos

Can you really blame me if I quaffed down more than two of these soft tacos 🌮 🌮 👆🏻

OMG! 😲 you can whip these up in like 10 minutes. I make them whenever I need to whip up something really quick for my lunch or dinner. Easy to make, and they super healthy. And, here goes the recipe:


2 yellow corn tortillas
8-10 pieces of extra-firm tofu chunks
1/2 cup chopped mango
1/2 cup pico de gallo
2 tbsp chopped cilantro
2 tbsp shredded Mozzarella cheese


*Heat a non-stick griddle and warm up the tortillas. In another pan, pour 1 tbsp of olive oil and sauté tofu chunks with a dash of salt and cayenne pepper.
*Fill each tortilla with 4-5 pieces of tofu, 1 tbsp of pico de gallo, 1 tbsp chopped mango, cheese and garnish it with cilantro.
