Bajra Coconut Crepes with PB & J and Maple Whipped Cream. Happy Women’s Day 🧡 Made these for Sunday Brunch and I had just enough batter left to make 2 more for today’s breakfast. Served exactly like I did last night - slathered the crepes with peanut butter, strawberry jelly/jam, and sprinkled toasted coconut. And then ended with maple 🍁 whipped cream. Kaale chane ke sabzi (Black Chickpea Curry) made this warming delightful curry last night and served it alongside rice. Weather has been really weird in California - warm last few days and now cold 🥶 + there’s rain prediction in a next few days. This sabzi has fresh ginger garlic paste and all the spices to warm up the soul 🙈 Happy Almost Friday 😻😻 #weekdaydinner
Pineapple - Red Pepper - Tofu Fried Rice for dinner last night. Only one word comes to mind- it was BOMB 💣. It has lots of ginger, garlic, pineapple, cashews for crunch, pre made honey-sesame tofu and red pepper chunks. Drizzled some vinegar, soy sauce and loads of mint and cilantro. Fresh Orange 🍊 & Almond cake 🍰 Baked this last night to recover from the birthday weekend 😆 Organic fresh oranges from my backyard, almond flour and maple syrup. Really simple ingredients for such deliciousness. Also can you tell I was too excited to dig in while it was hot haha. Please let it cool down completely before cutting. Recipe link in bio. Mashed Chickpea Beetroot Corn Burgers last night. Created a mix of mashed chickpeas, potato, beetroot and corn. Added all spices - cumin, ginger garlic paste, salt, green chilies and breadcrumbs to bind the dough. Made thick patties and Baked them on 420F for 15 minutes on each side. And served with @primalkitchenfoods Mayo and thousand island dressing + heaps of homemade Tandoori french fries 🤤🤤 Hope you all had a nice Saturday night as well. Happy Sunday 🧡🧡 #weekendmood
Camembert & Brie with Balsamic Baked Grapes 🍇 and toasted walnuts. Drizzled the entire plate with honey while all of it was still warm. Having these in the form of appetizers during dinner tonight with toasted French baguette 🥖 slices and cucumbers 🥒. Colorful pepper - Coconut Spaghetti 🍝 Whipped up this instant lunch today. I typically cook meals over the weekend but this week was different 🙈 all I had was colored bell peppers in the pantry (didn’t do grocery shopping either 😋)

No boil egg noodle - spinach - tomato - mushroom casserole 🤗 This was the dinner last night. Partially cooked the mushrooms in tomato sauce. Then it’s all about layering. 1/2 Sauce with mushrooms > uncooked egg noodles > spinach > salt/pepper > half can coconut milk > remaining sauce with mushrooms > egg noodles > ...(repeat until coconut milk)... > bake for 30 mins on 425F > remove from oven and add sourdough breadcrumbs all over > bake again for 10-12 mins. Paneer Nihari with leftover beetroot-potato mix from yesterday stuffed in a Flatbread (Cottage cheese curry with beet-aloo paratha). Started early today to prep lunch.
