This dinner entree is about as easy as it gets: 7 ingredients, 15 minutes, and 1 pot. It has olive oil, cumin seeds, and minced garlic as a base. This scrumptious dish goes really well with whole wheat phulkas, jeera rice, and naan. If you want it to taste restaurant-style, shallow fry those paneer chunks. I assure you it will be delicious. Here goes the recipe:
Ingredients: Serves 1
1 cup cottage cheese chunks
1 1/2 cups washed and rinsed baby spinach, chopped
1 tsp cumin seeds
1 tbsp olive oil
1/2 tbsp black pepper
1/2 tsp minced garlic
Salt to taste
Method:
*Heat olive oil in a pan on medium flame. Add cumin seeds and let them sputter.
*Now add chopped spinach and stir it continuously for 5 minutes on a medium to high flame. This will help spinach cook quick and it won’t lose the nutrients. Also, avoid adding salt because spinach will lose water and color. So we will add salt in the end.
*Reduce the flame, and then add garlic and keep stirring it for 1-2 minutes.
*Add cottage cheese and black pepper, stir it for 3-4 minutes so spinach meddles well with cottage cheese.
*Turn off the flame, and add salt. Give stir fry palak paneer a last stir.
*Serve it with piping hot phulkas 🙂
