Lebanese Fattoush Salad

Eating healthy on weekdays is often difficult for me because I prefer salads or lettuce cups for dinner.  So for a change, I decided to make a huge plate of this refreshing #fattoush salad to make a salad meal exhilarating. It’s a simple and quick one, so definitely give it a try!

Lebanese Fattoush Salad

Ingredients:

1 cup chopped Green and Red Bell Pepper
1 cup chopped Romaine Lettuce
1 cup chopped tomatoes
1/2 cup juvenile-chopped red onions
A handful of cilantro finely chopped
Juice of a lime
1/2 tbsp feta cheese
1/2 tsp extra-virgin olive oil
2 tbsp Kashi 7 grain nuggets (Authentic fattoush salad has fried Pita chips. To make this healthy, I replaced pita chips with Kashi)
salt to taste

Method:
1. Mix everything in a bowl, squeeze a juice of lime and serve right away
